The software that we use for this is called a Wiki Wiki Web, an online collaboration system. It allows easy editing without knowing anything about HTML or web design. When you edit a page, backups of the old versions will be kept around (see the Page Revisions link below) and can be restored at any time, so you need not be afraid of messing anything up.
